RESTAURANT
Drawing inspirations from the nature, our restaurant team strives to deliver an ever changing menu that is heavily influenced by our relationship to the Yarra Valley. Over our long history at this site we have developed close friendships with producers and owners of small family owned estates, and these friends now deliver produce directly to our chefs as they ripen. Therefore, a dish may be available for only a small time as the produce will dictate the menu for the week, month or season.

Bread will be baked daily, pickles, chutneys, and ferments will take pride of place against locally sourced meats and we will have a strong focus on vegetables and herbs grown onsite. Our menu based on locally sourced produce will change on a weekly basis. The event menu is crafted around the season and may change due to the availability of produce.

ACCOMMODATION
We offer the below two options of accommodation here at Seville Estate. The Seville Homestead is perfect for larger group gatherings, while the Vineyard Apartments are more suitable for couples or groups of two.

- Seville Homestead
Nestled into the landscape and within the surrounds of newly established gardens sits the Homestead. Built by Dr Peter McMahon and his wife Margret in 1975, it has been lovingly restored by their grandson Dylan, who is also the chief winemaker at Seville Estate, in 2018. The Homestead offers a place to unwind and celebrate family and friends in a stunning contemporary space overlooking the pool area, native gardens and the distant hills to the west.

The homestead features 4 bedrooms, and can accommodate up to 8 people.

- Vineyard Apartments
Three newly renovated and uniquely styled self-contained apartments are perfect for couples. Each room features a king bed, ensuite bathroom, a kitchen and a private balcony. Here you can enjoy our award winning wines, fresh air and an abundance of native wildlife.

Each apartment can accommodate up to 2 people.
There are 3 separate apartments available for booking.

HERITAGE
When Dr Peter Mc Mahon planted the first vines at Seville Estate in 1972, it marked the rebirth of the Yarra Valley as a premium wine region. By the end of the that decade Dr Mc Mahon and his wife Margaret, along with producers such as Mount Mary, Yeringberg, Yarra Yering, St Huberts and the like were fashioning wines that served to re establish the lofty reputation the Yarra had enjoyed in the 19th century. From its first vintage, Seville Estate quickly established itself as one of the Yarra Valleys finest producers. Surprisingly in a region more renowned for its red wines produced from Cabernet and Pinot Noir, its was the Seville Estate Shiraz that received the most attention quickly becoming one of Victorias most sought after wines Today 35 years after Peter and Margaret started the dream; Seville Estate enters its third phase. A new generation of the Mc Mahon family has also become involved in Seville Estate. Peter and Margaret’s grandson, Dylan McMahon is now the winemaker following the passion ignited a generation before. The Van Der Meulens, who ran their own successful design and construction company G & M Building Group in Brisbane for 18 years, have long been passionate about wine and looked at several wineries around the country before settling on Seville. They bought the property from the controlling group of partners led by CEO Robert Hawkins and winemaker Iain Riggs (from Brokenwood in the Hunter Valley). The Van Der Meulens moved to the winery, located off theMonbulk-Seville Road, in December 2005.

VINEYARDS
Situated on a ridge of red volcanic soil overlooking the upper Yarra Valley hidden from the well-trodden tracks of the mainstream, the soils at Seville Estate are extremely fertile red to grey volcanic, over a clay base.

The vines are substantially dry grown, as irrigation is only used when the vines are under extreme stress.

Our Old Vine Blocks use a “T” trellis system to control the fervent growth in the vines which results in low cropping of 2 tonnes per acre. The blocks planted in the 1996 use VSP (Vertical Shoot Positioning). The vines are all hand pruned to the method of cane pruning. This method requires a good understanding of the vine and is more labour intensive. This also achieves better management and control for next years crop level.

The vines face north-east with an altitude of 200m above sea level. Vintage comes to Seville Estate much later than other areas in theYarraValley. The elevation provides cooler temperatures that achieve more consistent ripening with good fruit and spice aromas developing in the grapes.

Seville Estate is a very personal expression of wine from a unique site. The planting, pruning and harvesting of the vines is done with the same passion as that applied in the winery.

Currently standing at 20 acres under vine, the varietal breakdown is as follows:

The Estate and Reserve ranges are made from fruit grown the site with additional fruit sourced from other premium vineyards for use in the Barber range of wines.
